Courses taught:
Nutrition 123: Comparative Animal Nutrition. This class examines
the anatomical, physiological, and biochemical properties of animals that
allows their capabilities to eat diverse types of foods.
Avian Sciences 150: Comparative Avian Nutrition. The focus of this
class are the diverse digestive and metabolic strategies that permit birds
to consume foods as diverse as nectar and other birds.
Nutrition 251: Nutrition and Immunity. The impact of diet on
immunocompetence and the consequences for infectious and non-infectious
diseases controlled by, or caused by, the immune system is examined. A
separate focus is the impact of immune responses on the dietary needs of
animals and humans.
Nutrition 257: Current Topics in Nitrogen Metabolism. This
advanced graduate level class examines current literature in protein, amino
acid, and nucleic acid metabolism.
